Marzipan Cookies
SERVES: 20 COOK TIME: 15 minutes TOTAL TIME: 30 minutes
Ingredients
1 package Solo Foods Marzipan
1/2 cup butter at room temperature
1/3 cup granulated sugar
1 teaspoon almond extract
2 teaspoon vanilla extract
2 eggs
1/3 cup corn starch
1 cup flour
Instructions
To prepare, preheat your oven to 350°F and prepare two baking trays with parchment paper. Warm the marzipan for 30 seconds in the microwave to make it smoother and then using a hand or standing mixer, combine the butter and marzipan until smooth. Once smooth, add in the the vanilla extract, almond extract, sugar, and eggs (the setting should be on high while adding these in for about 30 seconds). In a separate bowl, combine the flour and cornstarch, then sieve this mixture. Add the dry ingredients to the dough in two separate portions and mix after adding each portion. Cover the dough with a towel and place into the fridge for 30 minutes. Add the dough into a piping bag fitted with a star tip. Pipe the cookies in circles onto the prepared baking tray. Place the piped cookies in the fridge for 30 minutes (this is to keep the cookie shape). Bake for 10-15 minutes and enjoy!
