Apricot Cheesecake Pastry
SERVES: 20 COOK TIME: 20 minutes TOTAL TIME: 35 minutes
Ingredients
2 pack frozen puff pastry
4 oz cream cheese
3/4 cup cream cheese or ricotta cheese
1 egg
1/2 cup sugar
1 tsp vanilla extract
1 can Solo Foods Apricot Cake and Pastry Filling
Egg Wash
Instructions
To prepare, line a baking sheet with parchment paper. In a bowl, mix cream cheese and sugar until smooth. Then add in additional cream cheese (or ricotta cheese), 1 egg, and vanilla extract. Mix until well combined. Cut puff pastry into 3x3 squares and put a tbsp of cheese mixture into the middle of each, then top with a tsp of Solo Foods Apricot Cake and Pastry Filling. Place into the freezer for about 1-2 hours and preheat the oven to 400F. Make egg wash with 1 egg and 1 tbsp water. Brush the pastries with the egg wash and sprinkle sugar on top of each (Do this fast before pastries thaw). Place the baking sheet into the oven, with pastries 1 inch apart each, bake for 15 minutes.
