Almond Pillows
SERVES: COOK TIME: 15-20 minutes TOTAL TIME: 2 hours
Ingredients
1 large egg
1 tbsp water
Dough:
1 cup butter (softened)
1 8oz package cream cheese (softened)
2 cups flour
1/4 tsp salt
Filling:
1 package Solo Foods Almond Paste
1 egg
1/4 cup sugar
Instructions
In a large mixing bowl, beat your softened butter and softened cream cheese until well blended. Then, add flour and salt and beat on low until combined. Divide your dough in half, wrap each half in plastic wrap, and place in the fridge for one hour. While that is sitting in the fridge, beat 1 egg, 1/4 cup sugar, and an entire package of Solo Foods Almond Paste. To prepare, preheat your oven to 375°F and prepare two baking trays with parchment paper. When your dough is ready, grab one half out of the fridge and place on a lightly floured surface. Roll dough into a rectangle and cut into as many 2in squares as possible and place on your trays. Brush each square with your egg wash and add a spoonful of your filling to the center of each square. Take out your other half of dough, roll into a rectangle, and cut into 2in squares. Place these new squares on each square with filling, lined up as best as you can. Lightly press all edges with a fork to seal and give the "pillow" look. Brush the top squares with the egg wash and (optional) sprinkle sliced almonds on top. Bake in the oven for 15-20 minutes and enjoy!
